Quinoa/Pumpkin Pancakes - Darlene Mazzone, Executive Editor


When my three sons hit the kitchen during the holidays as they arrive from around the country, a big hearty breakfast is often one of the things they request the most. Since most guys don't take the time and effort to cook a big breakfast, these "Thanksgiving" pancakes are always on the Mazzone menu!


1 1/2 cups quinoa flour
1/4 cup packed brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground allspice
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1 3/4 cups buttermilk
1 cup pumpkin puree
2 large eggs
2 tbsp vegetable oil


Measure flour, sugar, baking powder, soda, allspice, cinnamon, ginger, and salt into large bowl. Mix well.


Whisk together milk, pumpkin, eggs, and oil in a medium bowl. Add to the flour mixture and stir until just blended.


When they come off the griddle, add your choice of syrups and maybe even a dollop of whipped cream!
