This obviously isn't a traditional holiday dish, but it's one that means a lot to me. When we lived in Greenville, SC, a family in our church adopted us. We still vacation with them and their children. Each winter before we took off on summer adventure, we'd have a "family" dinner plan the trip. My friend always made this salad and gave me the recipe. It always showed up at our beach dinners, too. Every time I make it, all those memories come flooding back. It's my helping of happiness not only around the holidays but on many days during the year.
Best Salad Ever
1 bag hearts of romaine
1 pint strawberries, halved
1 cup shredded Monterrey Jack cheese
1 cup walnuts or pecans, toasted
Dressing
1 cup vegetable oil
½ cup red wine vinegar
¾ cup sugar
¾ tsp minced garlic
½ tsp paprika
½ tsp salt and pepper
Place romaine in a large bowl. On top of the romaine, add the strawberries, toasted walnuts or pecans, and cheese. Combine all ingredients with dressing. Toss and enjoy!
